½ cup vegetable oil
4 large egg whites
1 teaspoon vanilla extract
For the Frosting:
½ cup unsalted butter
1 cup granulated sugar
1 cup evaporated milk
3 large egg yolks
1 teaspoon vanilla extract
1½ cups sweetened shredded coconut
1 cup chopped pecans
Instructions
Prepare the Cake
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
Mix Ingredients: In a large bowl, combine the white cake mix, buttermilk, vegetable oil, egg whites, and vanilla extract. Beat on medium speed with an electric mixer until the batter is smooth and well combined.
Divide Batter: Pour the batter evenly into the prepared pans.
Bake the Cake
Bake: Place the pans in the preheated oven and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Let the cakes cool in the pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.
Prepare the Frosting
Cook the Base: In a medium saucepan over medium heat, melt the butter. Add the sugar, evaporated milk, egg yolks, and vanilla extract. Stir constantly with a whisk or spoon.
Thicken: Cook the mixture for 10–12 minutes, or until it thickens and turns a golden-brown color.
Add Coconut and Pecans: Remove the saucepan from the heat. Stir in the shredded coconut and chopped pecans. Allow the frosting to cool slightly before using.
Assemble the Cake
Layer the Cake: Place one cake layer on a serving platter or cake stand. Spread a generous layer of the coconut-pecan frosting on top.
Add Second Layer: Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
