Ingredients:
3–5 large potatoes
3.5 tbsp (50 g) butter
A bunch of fresh dill
A little salt, smoked paprika, black pepper, oregano
1.1 lbs (500 g) ground beef
1 onion, finely chopped
2 garlic cloves, minced
1 red bell pepper, diced
1 large tomato, diced
2.5 oz (70 g) tomato paste
A bunch of fresh parsley, chopped
3.5 oz (100 g) mozzarella cheese, shredded
Instructions:
Prepare the Mashed Potatoes:
Peel and boil the potatoes in salted water until soft.
Drain and mash them well.
Add the butter, chopped dill, salt, black pepper, smoked paprika, and oregano. Mix until smooth and creamy. Set aside to cool slightly.
Cook the Beef Filling:
In a large pan, sauté the chopped onion in a bit of oil until soft.
Add the minced garlic and stir for about 30 seconds.
Add the ground beef and cook until browned.
Add the diced red bell pepper and tomato. Cook for 5–7 minutes until softened.
Stir in the tomato paste, salt, pepper, oregano, and fresh parsley. Let it simmer for another 5 minutes, then remove from heat.
Shape the Potato Nests:
Preheat your oven to 375°F (190°C).
On a lined baking tray, take a portion of the mashed potato and shape it into a nest (a round base with a small well in the center).
Repeat until all the mashed potato is used.
Fill and Bake:
Spoon the beef mixture into each mashed potato nest.
Top each with shredded mozzarella cheese.
Bake in the preheated oven for about 15–20 minutes, or until the cheese is melted and golden.
Serve:
Garnish with extra fresh parsley or dill if desired.
Serve warm as a main dish or hearty side.
