Salmon Pasta Salad Recipe

Ingredients:
For the Salad:
8 oz (225g) pasta (penne, fusilli, or farfalle)
2 salmon fillets (about 1 lb / 450g), skin-on or skinless
1 tbsp olive oil
Salt & black pepper, to taste
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1 avocado, diced
1/4 cup fresh dill or parsley, chopped
2 tbsp capers (optional)
For the Lemon Mustard Dressing:
1/4 cup olive oil
2 tbsp lemon juice (or more to taste)
1 tbsp Dijon mustard
1 tsp honey or maple syrup
1 garlic clove, minced
Salt & black pepper, to taste
Instructions:
Cook the Pasta:
Boil pasta in salted water according to package instructions. Drain, rinse under cold water, and set aside.
Roast the Salmon:
Preheat oven to 400Β°F (200Β°C).
Place salmon on a baking sheet, drizzle with olive oil, and season with salt & pepper.
Bake for 12-15 mins until flaky. Let cool, then break into chunks.
Make the Dressing:
Whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper in a small bowl.
Assemble the Salad:
In a large bowl, combine pasta, salmon, cherry tomatoes, cucumber, red onion, avocado, and herbs.
Drizzle with dressing and toss gently. Add capers if using.
Serve & Enjoy!
Chill for 15 mins before serving (optional) or enjoy immediately.
