Ingredients:
1½ lbs boneless, skinless chicken breasts, cut into chunks
2 medium zucchinis, sliced into half-moons
1 red bell pepper, diced
½ red onion, thinly sliced
1 cup cherry tomatoes, halved
¼ cup Kalamata olives, halved
2 tablespoons olive oil
1 teaspoon dried oregano
½ teaspoon garlic powder
Salt and black pepper, to taste
½ cup crumbled feta cheese
Optional: fresh parsley or basil for garnish
Directions:
Preheat oven to 400°F (200°C). Lightly grease a large baking dish.
In a large bowl, toss the chicken, zucchini, bell pepper, onion, cherry tomatoes, and olives with olive oil, oregano, garlic powder, salt, and pepper.
Transfer mixture to the prepared baking dish and spread into an even layer.
Bake uncovered for 25–30 minutes, or until chicken is cooked through and vegetables are tender.
Remove from oven and sprinkle with crumbled feta cheese. Return to the oven for an additional 3–5 minutes until cheese is warmed through.
Garnish with fresh parsley or basil before serving.
