4 cups (1 liter) milk

4 large eggs

3/4 cup (150g) sugar

2 teaspoons vanilla extract

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (180°C). Prepare a large baking dish and a smaller baking dish that fits inside for a water bath.
Heat the Milk: In a saucepan, warm the milk over medium heat until it’s just about to simmer. Remove from heat and set aside.
Whisk the Eggs: In a mixing bowl, whisk the eggs, sugar, vanilla extract, and salt until smooth.
Combine Mixtures: Slowly pour the warm milk into the egg mixture while continuously whisking. This prevents the eggs from scrambling.
Strain the Mixture: For a smooth custard, strain the mixture through a fine sieve into the baking dish.
Prepare the Water Bath: Place the smaller baking dish inside the larger one. Fill the larger dish with hot water until it reaches halfway up the sides of the smaller dish.
Bake: Sprinkle cinnamon or nutmeg over the top (optional) and bake for about 45-60 minutes, or until the custard is set but slightly jiggly in the center.
Cool and Serve: Remove from the oven and let cool. Serve warm or refrigerate for a chilled dessert.
