Coconut Biscuits Recipe

Ingredients (Yields about 40-50 biscuits, depending on size)
4 cups all-purpose flour
1 cup butter (softened)
1 cup sugar
2 tablespoons custard powder or cornstarch
1 teaspoon baking powder
2 cups desiccated coconut
2 teaspoons vanilla essence
2 eggs
Instructions

1. Preheat the Oven
Preheat your oven to 350°F (180°C).
Line baking trays with parchment paper or lightly grease them.
2. Cream Butter and Sugar
In a large mixing bowl, cream together the butter and sugar using a hand or stand mixer until light and fluffy. This should take about 2-3 minutes.
3. Add Eggs and Vanilla

Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
Stir in the vanilla essence.
4. Mix in Dry Ingredients
Sift together the flour, custard powder (or cornstarch), and baking powder in a separate bowl.
Gradually add the dry ingredients to the butter mixture, stirring until combined.
Fold in the desiccated coconut to form a soft dough.
5. Shape the Biscuits

Roll small portions of dough into balls, about the size of a walnut. Flatten slightly with your palm or the back of a fork for a decorative pattern.
Place the biscuits on the prepared baking trays, leaving about 1 inch between each biscuit.
6. Bake
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Remove from the oven and let the biscuits cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
Tips for Success

Butter Texture: Ensure the butter is softened (room temperature) for easy creaming with the sugar.
Customize Flavor: Add a pinch of cinnamon or nutmeg for a warm twist, or sprinkle extra coconut on top before baking.
Storage: Store the biscuits in an airtight container for up to 1 week.
